Vanilla Cold Brew Coffee Popsicles

Prep Time: 10 minutes

Total Time: 6 hr 10 minutes

Ingredients

  • 12 ounces unsweetened cold brew coffee

  • 14 ounces full fat or light canned coconut milk

  • 1/4 cup pure maple syrup

  • 2 teaspoons vanilla extract

  • 1/3 cup dark chocolate chips

Instructions

  1. Blend together all of the ingredients except the chocolate until smooth. Pour the mixture into popsicle molds, Insert the popsicle stick and freeze for at least 6 hours or overnight.

  2. Remove the frozen popsicles from the molds and place them on a parchment lined baking sheet. Drizzle with the melted dark chocolate then place them back in the freezer to harden.

  3. Store the finished popsicles in a single layer in a freezer bag or other airtight container.
