Coffee Bean Cookies

Ingredients

-          1 tbsp instant coffee

-          2 tsp milk

-          1 cup cake flour

-          2 tbsp cocoa powder

-          3 tbsp corn starch

-          1/3 cup unsalted butter (room temperature)

-          1 egg yolk

-          7 tbsp powdered sugar

INSTRUCTIONS

1. Start by warming 2 tsp of milk in the microwave for 20 seconds. Then mix the hot milk with instant coffee until the coffee granules are completely dissolved.

2. In a large bowl, gently sift together cake flour, cornstarch, and cocoa powder. Set this aside for later.

3. Now, take the softened room temperature butter and whisk it until it's creamy. Add powdered sugar and mix it in. Then add the egg yolk and whisk until it's pale and creamy.

4. Pour the coffee into the butter-egg mixture. Mix until it's all evenly combined, and watch as the butter mixture turns a lovely light brown.

5. Sift the dry ingredients into the wet ingredients. Mix until the dough looks like coarse crumbs. Then use your hands to mix and press the dough until it's smooth.

6. Shaping time! Roll the dough into a long log, then divide it into ½ inch cubes. Each cube should be about 8g (or roughly 1 tsp). Now, use your palm to roll each cube into an oval shape resembling a coffee bean.

7. Use a butter knife or toothpick to press the middle of each dough. Place your cookies onto a baking sheet lined with parchment paper or greased with cooking spray. Then chill the dough in the refrigerator for about an hour.

8. It's oven time! Preheat to 325°F.

9. Take the chilled dough out of the refrigerator and pop it in the oven. Let it bake for 12-14 minutes.

10. Once they're done, cool the cookies for 10 minutes, and voilà! Enjoy!
