Honey Roasted Pistachio Cookies

Ingredients

  • 1 Cup Unsalted Brown Butter

  • 1 1/4 Cups Packed Brown Sugar

  • 1/4 Cup Sugar

  • 2 Large Eggs (Room Temp)

  • 2 Tsp Vanilla

  • 2 1/2 Cups of All Purpose Flour

  • 1 Tsp Baking Soda

  • 1/2 Tsp Salt

  • 1 Cup Semisweet Chocolate Chips

  • 1/2 Chopped Honey Roasted Pistachios

Instructions

  1. Start by cutting the butter into cubes. In a heavy saucepan, heat the butter over medium heat to start the browning process. Stir constantly until the butter turns into a beautiful golden brown color. It's okay if it gets a bit foamy.

  2. Once it reaches that lovely golden brown color, remove it from the heat and place it in a heat-safe bowl to cool. After your brown butter has cooled, combine it with the sugars in a large bowl and whisk until everything is nicely mixed.

  3. Then add the eggs and vanilla, and whisk until everything is combined.

  4. Next, gently fold in the sifted dry ingredients until just combined. Be careful not to overmix. Finally, add the chocolate chips and pistachios and mix until everything is nicely combined.

  5. Remember, this cookie dough is best baked right away as it doesn't refrigerate well. Drop the dough by 1/4 cup balls or use an ice cream scoop. Flatten the cookie dough about 3/4 of the way since it's loaded with goodies and needs to spread while baking. Place 6 at a time on a large cookie sheet.

  6. Bake at 350 degrees for 10 minutes until the bottoms are a lovely golden brown. After they're baked, you can adjust the shape with a large round cookie cutter or a big measuring cup.
