Mocha Pancakes with Coffee Glaze

Mocha Pancakes with Coffee Glaze

Ingredients

Mocha Pancakes

  • 1 3/4 cups all purpose flour

  • 1/2 cup cocoa powder

  • 3 Tablespoons sugar

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 large egg

  • 3 Tablespoons unsalted butter melted

  • 2 cups milk

  • 2 Tablespoons lemon juice

  • 1/4 cup instant coffee

  • vegetable oil for cooking

    Coffee Glaze

  • 1 3/4 cups confectioner's sugar (powdered sugar)

  • 1/4 cup milk

  • 1 Tablespoon instant coffee

  • pinch salt

Instructions

  1. Heat a large nonstick skillet over medium heat.

  2. Whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl.

  3. Whisk together the egg, butter, milk, lemon juice, and instant coffee in a medium bowl.

  4. Pour the wet mixture into the dry mixture and stir until just combined (some lumps is fine). Do not over mix.

  5. Add a teaspoon of oil to the skillet. Scoop 1/4 cup of the batter into the skillet for each pancake. Cook until bubbles appear approximately 2 minutes, and flip. Cook another 1-2 minutes and remove from heat.

  6. Repeat with more oil and batter.

  7. While cooking, make the glaze by combining the powdered sugar, milk, instant coffee, and a pinch of salt. Set aside.

  8. Serve the pancakes warm with the coffee glaze.
