Ingredients
1 cup of flour
1/3 cup of vegetable oil
1 cup of pumpkin puree
2 eggs
1/4 cup of milk
2 teaspoons of pumpkin spice
1/4 teaspoon of salt
1 teaspoon of baking soda
2 cups of flour
Cream Cheese Filling
8 oz of cream cheese
1 teaspoon of vanilla
1/2 cup of sugar
Instructions
Preheat the oven to 350°F and line your muffin tins.
Stir in the pumpkin puree, oil, and sugar. Once incorporated, add the eggs, pumpkin spice, salt, and baking soda.
Stir in one cup of flour, then add the milk, followed by the last cup of flour.
Combining the cream cheese, vanilla, and sugar.
Divide your batter into the cupcake tins and add a dollop of the cream cheese mixture.
Place in the oven for about 15 minutes and let them cool for 5.
